Buying in Bulk is Easy!

When you buy Beef or Pork in bulk it is sold by Hanging Weight. This is the weight of the carcass after it has been skinned and cleaned. From that point the carcass is dry aged in a climate controlled meat cooler until the muscle fibres have broken down to optimal tenderness, during this dry age the carcass will loose some moisture weight. Next step, the carcass is then broken down by our master butcher and portioned into a variety of usable cuts. During this process there is some waste that occurs, such as inedible sinue, excess fat scraps and unusable bone pieces. Dont worry! This is completely standard when butchering any animal!

What to expect?

Beef - 800lb Beef carcass you can expect a 60-65% meat yield. This will result in 500+lbs of cuts!

Pork - 200lb Pork carcass you can expect a 75% meat yield. This will result in 150lbs of cuts!

Side Notes: Choice of custom cuts on any Half and Whole Beef Shares. Quarters and Mini Quarters have set cuts.
